Fried Chicken Buriyani! The Secret way I make this "All in one platter, Biryani" | Traditional Me

Despite how tricky it may sound, our Brother is quite skilled at employing his usual tricks to demonstrate his sweet side to my Grandma or to me when he desired to have his favourite meal prepared by either of us! He came today as well, bringing two pots of freshly made buffalo milk curd, asking our Grandmother to prepare Buriyani(Biryani). By offering to make the curry leaf sambol which is must when Biryani, Those days When we had a visitor or two, Grandmother used to make biriyani at least once per month or two. I don’t like to see Grandmother exerting her self toiling with heavy clay pots and pans in the kitchen. Because now Grandmother is not strong physically! That is why I promised to cook the Buriyani for Brother! Yet I can’t stand his annoying regulations after doing the cook for him. He said that he is not going to eat the Biriyani if it’s not up to Grandmothers taste. Though Biryani originated in India, when it is In Sri Lanka, "Biriyani" the name has changed into "Buriyani" and it is traditionally prepared in a somewhat distinct manner. We utilise our own spices like mace, fennel seeds, pandan leaves, and curry leaves in place of star anise and bay leaves etc. We use short grain rice like Samba instead of long grain Basmati rice. We cook the rice with a curry that has a chicken flavour rather than cooking it with chicken and stock. Additionally, we add ghee to the rice in such a way that the rich buttery flavour of the ghee added when steam cooking each grain of rice will improve the flavour of the rice. In addition, unlike the raita salad made with cow's curd, for a salad to accompany the biriyani, we don't mix in any curd. Even our curry leaves sambol, which is made with fresh coconut, has taken the place of the customary mint chutney of India. The delicious Biriyani pairs perfectly with a side dish of any chutney and a mixed vegetable dish made with carrots, potatoes, and green peas. Lettuce, pineapple slices and large onion slices added to the rice as a garnish improve the dish's appearance and flavour. In any case, I was relieved that I had finally mastered the art of making a delicious Biriyani that lived up to my Brother's expectations of my Grandmother's original, delectable Buriyani. I must share another incredible and very interesting story with you all. My stunning island paradise, which is surrounded by the Indian Ocean, is blessed with a highly rich culture that has long since travelled towards our contemporary future through connecting with the world's heritage. Our island paradise's prime location along the historic Silk Road, which connects the east and the west, has greatly enriched us with both authentic local traditions and cultures from around the world. Since historical days, We are indeed blessed and lucky to be a country that is uniquely and geographically located in the ancient Silk Road that merged the east and the west, at the same time Sri Lanka became very fortunate to experience and be part of very rare opportunity of being enriched with so many international cultural diversification! Above all internationally rich culture and traditions, our neighbouring country India takes such very special place, not merely because it’s position as our immediate neighbour but Sri Lanka shares unique similarities of cultural values and diversities with India. I have the same perception about our cuisines as well. Even this delicious biriyani story also holds such similarity! But the story changes a bit when sailing it into Sri Lanka, crossing all the seven seas. I made sure to learn Grandmother’s perfect Biriyani recipe without a tiniest mistake. Our Brother’s complimentary words are the best evidence for it. My sincere gratitude and appreciation for India for gifting us such salivating and richly delicious dish and for my dear Grandmother for teaching me how to cook this biriyani as "Buriyani" in our own special Sri Lankan way! ➡️It’s more than four years for my uncle’s mango farming. Cursed to heavy rains, this season is not fruitful. It’s the second season of harvesting though. Unfortunately, quality of most of those ripen have been tested by squirrels uninvitedly before anybody reaching them. My passion for both the sweet taste of ripen mangoes and pickles made with well grown mangoes wrapped in salt and a bit of chilli has got a history. However, my father is the jubilant in eating well-ripen juicy mangoes which squeeze out through fingers. ➡️One of the favorite food stuffs most often made at our home is lavaria, a special kind of pancake made with string hoppers. First comes dipping rice in water, then pounding that manually using the mortar and pestle when soaked enough, thereafter sifting and making a ball of fine flour with a piece of cloth take place. Steam boiling is the final part of this first step. Then comes the most interesting part to watch. It’s a process done patiently. The steamed flour is kneaded with hot water and squeezed in a circular movement onto string hopper plates. To make lavaria, a filling of grated coconut sweetened with jaggery is what is used normally but today, it’s a special recipe; A filling made with ripen mangoes replacing jaggery has added a pleasant yellowish colour to the filling which is otherwise dark brown. What’s more? The taste added is beyond expression that is really mouthwatering. ➡️In the following morning father bought a bunch of green grapes, a bag of oranges and two pomegranates today. The only difference is he being old while me growing up. Seeing the two pine apples and the mangoes lying on the table, father suggested to make a fruit salad. Since it was his proposal, he was to assist me until the very end of salad making. Thanks for the big glass dish full of fruit salad eaten for lunch, our kitchen and I could enjoy some rest during the afternoon. Since lunch was light, at tea time, he couldn’t be satisfied with a usual refreshment like an aggala or a muffin with his cup of plain tea. So, getting back to work, I kneaded some flour and made a dough to make coconut roty, kept it aside and made a pickled mango with some fresh prawns bought at the fair and much green chilli found in the garden. Finally, the hot roty fresh from the hearth was served to him with a topping of mango pickle before he broke into the kitchen complaining over being super hungry. Be with nature. Woke up early in the morning and boiled chickpeas and kidney bean for breakfast. Chickpeas, mungbeans , cowpeas are grandmother’s all time favourite breakfast. Brother don’t like even to look at them but when there is no other option for breakfast and he was starving, he slowly creeps into the kitchen and eats them. Actually I was planning to cook potato white curry with spicy chicken curry for lunch. Since there were baby carrots with their leaves, it seemed like a good combo with a fresh carrot leaf salad and fried prawn papadams( prawn rice crackers). But this brother of ours started to distract me by giving me different ideas of cook for lunch! So I didn’t have any other choice but to change my original lunch plan. Well as I say no pain no gain, my little brother had to chop firewood for the oven to indulge in his favourite roasted chicken! Eating a whole roasted chicken with white rice, wasn’t an exciting and appetising idea to me at all! After thinking in a novel and a tasty way, I decided to cook a fragrant rice! We Sri Lankan’s are very particular about our yearly national festivities. "Kaha bath“ or savoury yellow rice gets a very important status in the center of the table! This yellow rice I cooked had a different taste than the usual yellow rice! When hot rice was served on to “halmilla leaves“(Trincomalee Wood) indeed it produce some what a different yummy taste! When the whole chicken was marinated with a buttery rich marinade with a mixture of ghee, butter and the spices rubbed lavishly in the chicken gives such a rich, smoky taste because the heat inside the wood oven melts the fat of the chicken skin, deeply tenderizing the chicken with every flavour absorbed into the chicken! Since I wanted this big 8 pound chicken to cook into succulent juicy perfection, I let it roasted it for 2 1/2 hours as it was a very huge chicken like a turkey. While I was roasting the chicken, I put the potatoes and the vegetables also into the oven for them to be cooked to the perfection! The premature eggs which I’ve got with the whole chicken was also added to the dish! I made the stuffing by mixing the left-over chickpeas that I cooked for breakfast with passion fruit pulp and the rind of an orange. My main idea of stuffing the chicken with the chickpeas mixture was to enhance the taste of the stuffing with the drippings of the roasting chicken! I mashed the boiled chicken eggs and mixed them with the stuffed mixture of the roasted chicken and brother really enjoyed it very much. Though brother doesn’t like to eat chickpeas, he enjoyed the chickpeas mixture made in this way, by going for several servings . I arranged the baked vegetables on the bed of cooked rice platter and placed the roast chicken on the middle of it and kept it on the table. The rice platter got decorated with unusual colors by the mixture of light green Turkeyberry, dark green okra, orange tender baby carrots, purple and yellow yams and potatoes. Our brother was perfectly correct. Aunty Mary's Christmas table was also looked just like our table today. Though we don’t celebrate Christmas as Buddhists, we have never missed Aunty Mary's Christmas table on every Christmas Day at her home! Love you All! I’m that village girl picking beads walking through the beautiful dresses. There were around twelve ripe avocados fallen on the floor. I picked beads full of a bucket not a make a necklace but to prepare something delicious which could take me to past memories.☘️💚 Though these avocados are in smaller shape, they taste buttery. They can be eaten even without sugar. I used to eat them filled with kithul juggery. I still can’t get rid of it.😍 When fresh milk is added to the caramelized brown sugar mixture, whitey bubbles just sprayed out giving me the exact picture of Hummanaya blowhole. After few minutes, mixture should be taken out from the hearth and stir it. I cut all the ripe avocados just for a special thing. I added the avocados to a clean transparent glass. The greenish avocados filled in the glass look like a mountain range in a typical cool temperate rainforest. The streams flowing down through the range can been seen as whitewater falls. 🎄The snow falling down to the mountains lay down as whitey sugar cubes. Such a beautiful view it is. 🏞 The view got vanished just like the mountain caught in strong wind by giving you a mouthwatering drink to enjoy. 🧃 Suky can’t help waiting for the colorful Marble cake shaded with brown, yellow and green.🤭 Butter icing should be spread on the surface of the cake piece and cover it with wafers cakes. Now, cut them in to pieces carefully and turn it upside down. Then again spread the butter icing and cover it with wafers cakes as earlier. I used to send brother to the boutique in the village to get wafers cakes when in the childhood. This time I made them for my loved ones all by myself. 😇 Now, it’s time to enjoy these yummiest cakes. It’s truly amazing.😍😋 Mother fried more potato chips for the teatime next day not only for us but also to share with Grandmother’s place as well. Fried thin potato slices danced in the deep oil and came out super crunchy. It’s such a nice snack to try out with salt and chilli powder spread on it. 🍟 After mixing the boiled eggs cubes, cheese with avocados together with salt, pepper and curry leaves then, tomatoes, corns, onions, kochchi / chilli pepper should be added along with some lime juice and mixed well. Brother decided to plant more pineapple plants, so he gathered his buddies and began clearing the land where his pineapple field was located. Since the residents of the village have made it a habit to establish close relationships with each other, when it comes time to harvest seasonal crops and prepare the ground, everyone quickly rallies to lend a hand. Without this important friendship and connection, one would never consider hiring a professional assistant to complete this labour. Friends of the brother rush around him to lend a hand, mostly because they are certain that his older sister will feed them a lovely home-cooked lunch, of course. This time, I considered cooking a different variety of rice to satisfy those hungry and diligent youngsters with rice packs made on my top-secret recipe. This time I made a variety of rice packs that were baked in a wood oven. To be honest, everyone loves the thought of having lunch wrapped in banana leaves. Whoever who had experienced the distinct flavour of a lunch wrapped in a banana leaf will definitely miss that fresh, rich taste of such a lunch pack. In addition to making rice. prawn masala and tempered potatoes, I also used the prawn shells to make this secret white curry. It really enhance the rice when they are added on top of the rice and when they baked in the oven until the curry is soaked and infused with half cooked rice grains packed in banana leaf. The leaf's flavour is also added to the rice when they cooked in the oven. It was my top-secret recipe which was thought by my Grandmother. Onto the lunch, I also added two halves of hard-boiled eggs for them to enjoy. I used to send something tasty for them to have for tea when for a farming give-a-hand like this. But this time, I saw my brother arrive and prepare one of his delectable drinks by blending passion fruit, watermelon and orange. It's kind of interesting how his pals' thirst won't be quenched if they don't try one of his delicious drinks. Anyway, this time I never got to try his drink despite all my brothers' boasting.
